Welcome! Heritage Beef is a family operation; we are Marcy and William Epperson, along with our sons Virgil and Wendell., Our families have ranched through thick and thin in the rough, rocky hills of Edwards County in the western edge of the Texas Hill Country since 1879, and in Texas since the early days of the republic. The ranch near Rocksprings that we currently live on was purchased by William’s great-grandfather in the early 1900s. 

We strive to follow regenerative principles:  improvement of soil health, biodiversity, and increase of ecosystem services are priorities in the management our operation. The health and well being of the entire ranch and all its inhabitants including livestock, wildlife and ourselves is our highest goal. We utilize are variety of management strategies to achieve this goal, from prescribed fire to targeted grazing with specific species. We use horses to work livestock and have followed low stress livestock handling methods for many years. 

Currently, we offer grass-finished beef, goat and lamb, in both individual cuts and larger share type amounts of quarters and halves to whole animals. In the past year we have added beef jerky, beef snack sticks and sausage.  We also offer competitive wholesale pricing to farm-to-table restaurants.

Our cattle are Corriente, a type of Criollo cattle, that were originally brought to the Americas from Spain in the late 1400s for meat, draft and milk.  These hardy cattle are smaller, which makes them better suited to climb hills for grazing in our rough country and semi-arid climate.  They are naturally insect and disease resistant and select a wider of variety forages when they graze.  They are adapted to warmer climates and do not store as much exterior fat as norther European breeds, yet they will will have a lovely marbling in interior muscles. Our original breeding Corriente/Criollo cattle came from the Sierra de Durango, Mexico in the early 1990s. We have also added  Akaushi (Wagyu) genetics to our program, to develop another line of beef with even more marbling from cattle which possess the same hardy characteristics as the original Criollo cattle.

Our goats are a Spanish/Boer cross, and we breed Dorper cross sheep for meat.
